Ingredients

  • 250g pork, cut into 1cm cubes

  • Batter

    • 125g or 1 cup plain flour
    • 1 tbsp cornflour
    • 1½ tsp baking powder

    • 1 tbsp vegetable oil


  • Sauce

    • 125g or 2/3 cup brown sugar

    • 1 tbsp cornflour

    • 125ml or ½ cup white wine vinegar

    • 2 cloves garlic, crushed

    • 4 tbsp tomato purée

    • 6 tbsp pineapple juice


Method


  1. To make the batter, sift the flour, cornflour and baking poweder into a mixing bowl, add the oil and enough cold water to make a thick smooth batter.

  2. Heat quite a lot of oil in a wok untill almost smoking, drop the pork cubes in the bater, and then into the oil in batches, removing them with a slotted spoon when the batter is golden brown, and the meat cooked through, set aside and keep warm

  3. To make the sauce, mix all the ingredients together, and cook in the wok for 1-2 minutes

  4. Serve on a bed of noodles or rice, with stir fried vegetables.
