Fruity Chicken
Grilled chicken with an intense orange syrup and a rich tomato sauce.
Ingredients
For 2 portions…
- 2 Chicken Breasts
- 2tsp walnut or olive oil
- 100ml fresh orange juice
- 2tsp honey
- 1 tin chopped tomatoes
- 1 large onion
- 1 small pepper
- handfull of mushrooms
- 1 banana
- glass of wine
- 1tbsp tomato purée
- 1tsp oregano
- 1/2 tsp coriander
- small lump of butter
- 1tsp brown sugar
- seasoning to taste
- 2 portions pasta shells or twirls
Method
- Score the chicken breasts lightly on each side, coat with oil and ground pepper, and leave to marinade.
- Finely chop the onion and pepper, and gently fry in the butter until soft. Then add the finely chopped mushrooms, and fry for a couple more minutes. Add the remaining ingredients, excluding the orange juice, honey and banana, and simmer until thickened. Add the chopped banana about 5 minutes before serving.
- Boil the orange juice and honey seperately, reducing to a thick syrupy consistency, just letting the honey caramelise slightly.
- Meanwhile, grill the chicken until golden and cook the pasta.
- Serve the tomato sauce on a bed of pasta, with the orange syrup drizzled over the chicken, accompanied by a green salad.
