Flapjacks ∞

Easy to make, and a good source of energy when out walking or suchlike.
Ingredients
- 330g margarine
- 2tbsp golden syrup
- 250g demerara sugar
- 500g oat flakes
- 2-3 tbsp mixed chopped nuts (optional)
- handful dried apricots, chopped (also optional)
Method:
- Melt margarine, sugar and syrup in a big pan, over a low heat taking care to to caramelise the sugars; then add the nuts and apricots.
- Stir in the oat flakes, adding sufficient oats to make a stiff mix, but ensuring they are completely covered in the sugary mix.
- Transfer to a lightly greased tin (approx 30cm/12” square) and bake in a moderately hot oven (180C/350F/Gas Mark 4) for about 20 minutes.
- Mark into fingers/squares while still warm (and soft).
