Flapjacks

Easy to make, and a good source of energy when out walking or suchlike.

Ingredients

  • 330g margarine
  • 2tbsp golden syrup
  • 250g demerara sugar
  • 500g oat flakes
  • 2-3 tbsp mixed chopped nuts (optional)
  • handful dried apricots, chopped (also optional)

Method:

  1. Melt margarine, sugar and syrup in a big pan, over a low heat taking care to to caramelise the sugars; then add the nuts and apricots.
  2. Stir in the oat flakes, adding sufficient oats to make a stiff mix, but ensuring they are completely covered in the sugary mix.
  3. Transfer to a lightly greased tin (approx 30cm/12” square) and bake in a moderately hot oven (180C/350F/Gas Mark 4) for about 20 minutes.
  4. Mark into fingers/squares while still warm (and soft).
