Sweet and Sour Pork

Ingredients
- 250g pork, cut into 1cm cubes
- Batter
- 125g or 1 cup plain flour
- 1 tbsp cornflour
- 1½ tsp baking powder
- 1 tbsp vegetable oil
- Sauce
- 125g or 2/3 cup brown sugar
- 1 tbsp cornflour
- 125ml or ½ cup white wine vinegar
- 2 cloves garlic, crushed
- 4 tbsp tomato purée
- 6 tbsp pineapple juice
Method
- To make the batter, sift the flour, cornflour and baking poweder into a mixing bowl, add the oil and enough cold water to make a thick smooth batter.
- Heat quite a lot of oil in a wok untill almost smoking, drop the pork cubes in the bater, and then into the oil in batches, removing them with a slotted spoon when the batter is golden brown, and the meat cooked through, set aside and keep warm
- To make the sauce, mix all the ingredients together, and cook in the wok for 1-2 minutes
- Serve on a bed of noodles or rice, with stir fried vegetables.
