Sweet tomato chicken

Necessity is the mother of invention as the saying goes. So here is my latest culinary invention, a sweet and tangy chicken dish, in a ratatouille type sauce.

Takes about half an hour, and serves 2 to 4…

Ingredients

  • Red onion
  • Orange pepper
  • Courgette
  • Handful of mushrooms
  • Couple of cloves garlic
  • 2 or 3 chicken breasts, diced
  • To make marinade add about 1 tsp each: Worcestershire sauce; sesame oil; balsamic vinegar; dark soy sauce; dark muscavado sugar; and ground black pepper to taste
  • Dash red wine
  • tomato purée
  • Can chopped plum tomatoes
  • 2 or 3 tomatoes, chopped

Method

  1. Marinade chicken breasts before starting
  2. Fried vegetables in order listed, then set aside
  3. Fry chicken over high heat until starting to crisp
  4. Add red wine and tomato purée and reduce
  5. Add chopped tomatoes plus vegetables set aside and simmer for 15 min.
  6. Serve with penne pasta and cheese to taste
