Sweet tomato chicken ∞
Necessity is the mother of invention as the saying goes. So here is my latest culinary invention, a sweet and tangy chicken dish, in a ratatouille type sauce.
Takes about half an hour, and serves 2 to 4…
Ingredients
- Red onion
- Orange pepper
- Courgette
- Handful of mushrooms
- Couple of cloves garlic
- 2 or 3 chicken breasts, diced
- To make marinade add about 1 tsp each: Worcestershire sauce; sesame oil; balsamic vinegar; dark soy sauce; dark muscavado sugar; and ground black pepper to taste
- Dash red wine
- tomato purée
- Can chopped plum tomatoes
- 2 or 3 tomatoes, chopped
Method
- Marinade chicken breasts before starting
- Fried vegetables in order listed, then set aside
- Fry chicken over high heat until starting to crisp
- Add red wine and tomato purée and reduce
- Add chopped tomatoes plus vegetables set aside and simmer for 15 min.
- Serve with penne pasta and cheese to taste
